Pomegranate Mojitos
1 oz. mint simple syrup*
a few mint sprigs, if possible
1 oz. lime juice (roughly one squeezed lime, if you have fresh limes)
1 oz. pom syrup
1 oz. rum (white rum is best)
club soda to top

We took a little mojito class and the teacher suggested using a collins glass. We, however, typically use pint glasses...:) Mostly because we really like this drink (also partially because we do not own Collins glasses).
Muddle lime juice + mint leaves a few times (don't overmuddle, as mint gets bitter when overmuddled!), add simple syrup & pomegranate syrup. fill glass with ice, add rum and club soda to top off, stir, garnish with lime slice and mint, if you have them.

* we made our own mint-infused simple syrup - very easy - heat 1:1 water:sugar + a handful of mint leaves until the sugar dissolves (doesn't need to actually boil).

Ginger Gin & Tonic
1 oz ginger liqueur (we used Domaine du Canton)
1 oz gin (we used Bombay Sapphire)
tonic water to top
Optional but awesome: muddle fresh strawberries, peach, or raspberries in bottom of collins glass)

Fill glass with ice - add liquor; top with tonic. garnish with lime and serve!

Orange Slush
1 lg. frozen orange juice concentrate
1 lg. frozen lemonade concentrate
7 cups water (a bit less is fine)
1 cup sugar
2 cups very strong tea
3 cups (+/-) vodka

An ice cream bucket is the perfect size container. Stir thoroughly. Freeze at least 24 hours.

To mix drink, fill glass 2/3 to 3/4 full, top up with 7-up or sprite. Stir and serve with small spoon.
